THIS IS FOR 8 X 6OZ FILETS, SO, I just put a couple of tablespoons of each for 1 piece of salmon for me…
1/2 CUP MAPLE SYRUP
1/4 CUP CIDER VINEGAR
1/2 CUP COLLINGWOOD WHISKY
1 TBSP CHOPPED FRESH THYME
1 TBSP GRATED LEMON ZEST
3 TBSP OLIVE OIL
SALT & PEPPER TO TASTE
1. Mix together the syrup, vinegar, whisky, thyme, lemon zest, oil & seasoning
2. Pour over salmon and marinate 1 hour
3. Preheat oven to 450 degrees
4. Remove salmon from marinade & place on rack over a roasting pan
5. Reduce marinade until a little syrupy by simmering over a medium heat
6. Roast salmon 10-12 minutes – depends on the thickness of the salmon – basting with the marinade….
