This salad goes great with the Honey Mustard Chicken

I bag (350g) frozen corn niblets or I use cut niblets from leftover cooked fresh corn 
I each green & red pepper diced
I cup of diced red onion
1 bunch of green onion chopped
1/2 cup of finely chopped coriander 
1/4 cup olive oil 
2 tbsp. rice or white wine vinegar
1 tbsp. honey mustard

If using frozen corn place in a bowl cover & microwave for 5 minutes.

Drain & place in a large bowl.If using fresh cooked corn just cut off niblets & place in bowl. 

Add green & red peppers, red & green onions and coriander. 
In a small bowl whisk together oil, vinegar & honey mustard.

Pour over vegetable mixture & season with salt & pepper.

Chill for at least 1 hour for flavours to develop.
