This is the last recipe for the Probus Pantry. I hope that you have enjoyed at least one of them.

Now that we can see our children and grandchildren, I thought it might be nice to make them a treat. Trust me it is worth it!

 

Rolo Chocolate Cookie Surprise

 

1 cup softened butter

1 cup sugar

1 cup brown sugar

2 eggs

2 tsp vanilla

2 ¼ cups all-purpose flour

¾ cup cocoa powder

1 tsp baking soda

40 individual Rolos do not substitute the minis. (I usually find them in the dollar store or Walmart)

¼ sugar or more to roll cookie balls in

 

In bowl, beat butter, white and brown sugar until light. Beat in eggs and vanilla until batter is smooth.

 

In a second bowl combine flour, cocoa powder, and baking soda. Stir into sugar/egg mixture to form soft dough.

 

Place approximately 1 tablespoon of dough in the palm of your hand. Press into a flat circle. Put 1 Rolo into the center and bring up the sides of dough to cover and enclose the Rolo. Roll gently between your hands to form a smooth ball.

 

Place ¼ cup sugar on a plate. Roll each ball in sugar. Place on a cookie sheet lined with parchment paper or grease the pan. Bake at 350 for 10 minutes or until tops are lightly cracked a firm. Cool on rack before eating.
