With restaurants closed and everyone being stuck at home, perhaps you need some new food arrangements to keep things different and exciting. With grocery shopping challenged many people are using the opportunity to try out the Meal Kit services like GoodFood, HelloFresh or Chef’s Plate.

Chicken Kebobs Calcutta Style – Peggy Sturch

I have had this recipe for over 30 years and still love it. You can easily cut the recipe in half but the leftovers are nice in a chicken caesar the next day. It is great with the Nappa Cabbage Salad.

Serves 4

2 lbs chicken breast skinned, deboned and cubed

 

Marinate

6 tbsp melted butter

4 tsp ground coriander

2 medium onions chopped

2 cloves garlic chopped

4 tbsp soya sauce

2 tbsp lemon juice

2 tsp brown sugar

salt and pepper

 

Marinate chicken for 6 hours or over night.

Tightly pack chicken on wooden skewers.

Discard marinate.

Grill, turning frequently.

 

Serve with a plain rice or a rice pilaf with dried fruit, nuts etc. and a salad.

 

Nappa Cabbage Salad

 

A refreshing light salad for the spring and summer. Make the noodle and nut mixer and freeze what you do not use for a later date. The dressing lasts forever.  Share the cabbage or make a stir fry with the left overs. This salad is usually still crunchy and delicious the next day.

 

Nappa Cabbage Salad

Serves 10

 

1 head Nappa cabbage chopped finely

5 green onions chopped finely

2 pkg. Ramen Noodle soup

   (break up noodles, do not use seasoning)

½ cup sesame seeds

1 small pkg. slivered almonds

¼ cup butter

 

Mix chopped cabbage and onions. Chill

Brown noodles, sesame seeds and almonds in butter until light brown in colour. Cool.

 

Dressing

1 cup vegetable oil

2 tsp. soy sauce

¼  cup sugar

½ cup white vinegar

 

Mix all dressing ingredients together.

Shake well.

Toss vegetables and nut mixture with dressing.
